Posted on

Korean food is all the rage in Seattle lately, with many people seeking Korean food recipes and authentic barbecue or gogigui restaurants. While many Korean restaurants such as Seattle favorite Trove offer the opportunity to roast a plethora of meats right at your table’s built-in grill, very few offer quality cuts of meat. Enter Hae Song Korean BBQ. Based in the Federal Way area of Washington State just south of Seattle, Hae Song offers authentic Korean BBQ with an emphasis on providing USDA prime grade beef. Of all the beef that comes out of the United States, less than 2% is certified prime. Due to its scarcity, prime grade beef is hard to find in supermarkets as much of the supply is gobbled up by fine meat purveyors and restaurants. If you’ve ever savored prime grade beef, you’ll recall its distinctly tender and juicy texture with a buttery flavor. Now imagine grilling that beef Korean-style with a side of kimchi. It’s a combination to die for, and it’s available at Hae Song.

Available cuts of USDA prime beef on the menu include short ribs, marinated short ribs, short rib cubes, New York ribeye steak, and beef brisket.

While Korean barbecue is the supreme focus of Hae Song, they also offer a full menu of traditional Korean dishes including bulgogi, bibimbap, soft tofu stew, seafood pancakes, crispy dumplings (mandu), stir-fried sweet potato noodles (japchae), and much more. Check out Hae Song’s full food menu here.

I had the pleasure of photographing the full menu of Korean food at Hae Song and sampling nearly every dish. Check out my food photos on the Hae Song website, with screenshots below and a full gallery of images here.

Photos: Seattle Meowtropolitan Cat Cafe

Posted on

Cat cafes have been all the rage in Japan, so it only makes sense that one of the newest coffee shops in Seattle would also be a cat cafe. Indeed, December 2015 saw the much anticipated opening of Seattle Meowtropolitan, the very first cafe where customers can enjoy a beverage while in the company of cute felines.

Located just north of downtown Seattle in the Wallingford neighborhood, this cat cafe is located close to some of its target customers: University of Washington students. The cafe itself is newly constructed with big windows letting passing pedestrians get a good glimpse of the cat cafe’s inner workings. Divided into two main spaces, the cafe portion serves coffee, tea, and pastries, and has its own lounge area. The larger part of the space has an open floor plan with seats and tables for humans, and a large structure for cats to lounge and play on. While the cafe is open to anyone during regular business hours, the cat section is limited to 50-minute time blocks to those who make reservations ahead of time. After all, it’s important to give the cats space. Reservations can be made online up to two weeks in advance for 1-hour blocks at a cost of $10 per person. All guests must be at least 8 years of age or older.

Perhaps the best part of Seattle’s first cat cafe is the fact that it doubles as a cat adoption center. If you fall in love with a kitty at Seattle Meowtropolitan, chances are high that he or she is up for adoption. This fact alone, besides being a main attraction point, could also backfire as it did at Vancouver’s cat cafe when they ran out of cats.

The concept of the cat cafe was made popular in Japan. Since then, many more cat cafes have opened around the world, particularly in North America. Today, cat cafes are available in Portland, Denver, Seattle, and soon Vancouver, British Columbia.

Interior Photos: Optimism Brewing Co.

Posted on

Attention home brew aficionados! Your new watering hole has opened in Capitol Hill and its name is Optimism Brewing Co. Located at the corner of Broadway and Union in what use to be an auto-row era building,  this impressive 16,00 square-foot brewery is the brainchild of husband and wife team Troy Halaka and Gay Gilmore. After spending years working at Microsoft and in the technology startup scene, Optimism Brewing Co is their first venture that doesn’t have anything to do with software. Instead, the huge establishment designed by Olson Kundig Architects, is where Hakala is living out his true passions for home brewing beer. In fact, there is a room on the upper level that doesn’t look unlike a science laboratory where Hakala comes up with his newest recipes. On tap at Optimism will be a majority of Hakala’s own recipes including two IPA’s and eventually barrel aged beers and sours.

The huge space at Optimism includes the upstairs laboratory, a bar, children’s play area, and plenty of open seating by the facility’s many floor-to-ceiling windows. There are also many large beer barrels capable of brewing 40 kegs of beer per run. The first official opening day of Optimism was on Saturday, December 5, 2015, which coincides with the anniversary of the end of the Prohibition.

I had the pleasure of conducting a photo shoot of Optimism Brewing Co‘s impressive interiors before they opened their doors to the public. As an interior photographer, I went wild over the incredibly large space, heavy use of wood, and the modern interior design influences that were clearly in the style of Olson Kundig.  Take a peek inside of the new brewery by viewing the interior photography gallery below, with the full set available here.

Photos: Wildwood Spirits Co

Posted on

In early November,  Wildwood Spirits Co opened its doors as Western Washington’s newest distillery. Located just below Howie’s Beardslee Public House, the Wildwood is the first craft distillery to open in Bothell. The sparkling new facility is modest yet stylish, consisting of a distillery and tasting room. Designed to take on the look of a vintage English apothecary, the tasting room has a modern aesthetic . Adjacent to the tasting room is a separate room with glass windows where shiny copper stills can be viewed. Much of the equipment including a 450-liter alembic pot still, 150-liter rectification still, and 20-plate column still is supplied by Christian Carl, a German still manufacturer. Despite its brand new physical establishment, Wildwood Spirits is already an acclaimed brand thanks to the talent of the head distiller whose spirits have received awards and recognition by Wine and Spirits Magazine. His acclaimed spirits include Stark Vatten vodka and Kur gin.

Wildwood Spirits Co is brought to us by Chef John Howie and Distiller and Sommelier Erik Liedholm. Howie is the notable chef behind some of the region’s prestigious restaurants including Adriatic Grill, Seastar, and John Howie Steak. His most recent restaurant is Beardslee Public House, which doubles as a 10-barrel brewery where Drew Cluley of Pike Brewing produces 12-13 craft brews. Meanwhile, Beardslee Alehouse’s menu is focused on a farm-to-table concept in that it produces much of its own food including fresh bread, meat ground in house, and a locker for aging housemade charcuterie.

I had the pleasure of visiting Wildwood Spirits Co on the day of their opening and snapped some interior photos. As an interior photographer with a penchant for minimalist design, I went wild over the clean, stylish tasting room and the incredibly huge, shiny copper barrels in the back room. Take a peek inside of Wildwood Spirits Co below.

Food Photos: Star Wars Gingerbread Village

Posted on

This month, the Sheraton Hotel in Seattle debuted their Star Wars Gingerbread Village as part of their 23rd anniversary. Each year, the Sheraton picks a new theme for their gingerbread village, and it seemed all too appropriate that this year’s inspiration was Star Wars. The artistic displays were excellent artistic examples that made for unique Seattle food photography images. All displays were carefully put together by the Sheraton Hotel’s culinary team working alongside local architecture and construction firms. All of the displays felt larger than life as they towered above many spectators. However, closer examination of each display showed many smaller vignettes of familiar scenes and characters from George Lucas’ blockbuster film. The Star Wars Gingerbread Village display launched just weeks prior to the much anticipated debut of the latest franchise installment, Star Wars: The Force Awakens.

The gingerbread village is located at the Sheraton Hotel at 1400 6th Avenue. Access to the display is free and open to the public 24 hours a day, 7 days a week between November 24, 2015 to January 3, 2016. Donations are being accepted on behalf of JDRF (Juvenile Diabetes Research Foundation), going towards Type 1 Diabetes research.  Take a look at some of the images below, with the full gallery available here.

A cozy neighborhood restaurant located in the Capitol Hill neighborhood of Seattle, Cascina Spinasse is home to some of the city’s best pasta dishes. Since opening its doors in 2008, Spinasse has risen to become one of Seattle’s most celebrated Italian restaurants. With an impeccable menu inspired by the cuisine of the Piedmont region of Northern Italy, all of Spinasse’s tasty pasta is made by hand including its signature dish of hand cut egg pasta with butter and fried sage. Sibling restaurant Artusi is also helmed by Chef Lane, but with more of an emphasis on cocktails, spirits, and smaller-sized bites. Next door to Spinasse is sibling bar and restaurant Artusi.

Artusi is a modern Italian-inspired cocktail bar and eatery helmed by Chef Stuart Lane, also of the adjacent Cascina Spinasse. While Spinasse places a special emphasis on its hand cut pasta dishes, Artusi’s focus is on cocktails and small plates within a unique, stylish interior. The white tiled bar area and creative lighting fixtures alone make this bar super chic and fun for dining any night of the week. Check out select photos from a recent menu photo shoot below.
