Josh Henderson’s Skillet has come a long way. Beginning as one of Seattle’s first major food trucks in 2007, Skillet has since opened two physical outposts in Capitol Hill and Ballard. The brick and mortar diners have become bustling spots for breakfast, lunch, and dinner, with Skillet’s signature bacon jam an ever popular favorite. In February 2016, a new branch of Skillet opened, dubbed Skillet Regrade. As Josh Henderson focuses on the restaurants making up Huxley Wallace Collective, including Pioneer Square’s Quality Athletics, this new iteration of Skillet is helmed by Jon Severson.

Located in the newer area of downtown Seattle where Amazon’s brand new corporate campus is being constructed, Skillet Regrade is open for breakfast, lunch, and dinner every day of the week. The menu focuses on modern American fare, using local and seasonal ingredients. This particular outpost will have a heavy focus on lunch, offering seated options as well as grab-and-go meals for busy on-the-go professionals.

Interior-wise, the restaurant space was designed and constructed by Mallet, Inc. Design features include an open kitchen facing a bar, subway tiles near the entrance, and reclaimed wood from Port Townsend. Despite being a small space, there is an ample patio area that will offer outdoor seating during warmer months.
