Seattle Chef Brendan McGill is known for his love of meats, as highlighted through his celebrated Hitchcock Deli. However, this James Beard Award semifinalist also has a love for vegetarian cuisine, which he highlights in his latest venture, Verjus. Inspired and largely designed by his wife, Heidi, Verjus is a bright, open space features an array of fresh, cold-pressed juices and a tantalizing menu of vegetarian cuisine.
