Ice cream is even more delicious when it’s (somewhat) healthy! Seattle Cookie Counter is one of few places in town where you can get scoops of vegan ice cream. Newly opened in the Phinney Ridge neighborhood of Seattle, the ice cream joint specializes in individual scoops of a rotating menu, as well as ice cream sandwiches featuring house-made cookies and ice cream floats, to name a few. In case you’re wondering, the ice cream is vegan due to the use of coconut milk in place of dairy.
