Korean food is all the rage in Seattle lately, with many people seeking Korean food recipes and authentic barbecue or gogigui restaurants. While many Korean restaurants such as Seattle favorite Trove offer the opportunity to roast a plethora of meats right at your table’s built-in grill, very few offer quality cuts of meat. Enter Hae Song Korean BBQ. Based in the Federal Way area of Washington State just south of Seattle, Hae Song offers authentic Korean BBQ with an emphasis on providing USDA prime grade beef. Of all the beef that comes out of the United States, less than 2% is certified prime. Due to its scarcity, prime grade beef is hard to find in supermarkets as much of the supply is gobbled up by fine meat purveyors and restaurants. If you’ve ever savored prime grade beef, you’ll recall its distinctly tender and juicy texture with a buttery flavor. Now imagine grilling that beef Korean-style with a side of kimchi. It’s a combination to die for, and it’s available at Hae Song.
Available cuts of USDA prime beef on the menu include short ribs, marinated short ribs, short rib cubes, New York ribeye steak, and beef brisket.
While Korean barbecue is the supreme focus of Hae Song, they also offer a full menu of traditional Korean dishes including bulgogi, bibimbap, soft tofu stew, seafood pancakes, crispy dumplings (mandu), stir-fried sweet potato noodles (japchae), and much more. Check out Hae Song’s full food menu here.
I had the pleasure of photographing the full menu of Korean food at Hae Song and sampling nearly every dish. Check out my food photos on the Hae Song website, with screenshots below and a full gallery of images here.
