Scout PNW is one of the latest restaurants from Huxley Wallace Collective’s slew of new, high-end eateries populating downtown Seattle. Located at the base of city’s newest luxury hotel Thompson Seattle, Scout PNW sports a unique interior full of woodsy, outdoor charm with lots of features reminiscent of a Boy Scout era such as vintage mugs, flannel upholstery, and a charming private dining area with the appearance of a deconstructed cabin. There’s also an intimate Chef’s Table offering a 15-17 course meal showcasing the very best of Puget Sound’s food. On the menu is a host of Pacific Northwest gems conjured by Chef Josh Henderson. You’ll find shellfish and oysters, foraged mushrooms, and grass-fed beef, all locally sourced.
Other local restaurants under the Huxley Wallace brand include Quality Athletics, Westward, and The Nest, the latter of which is located just above Scout PNW, also in the Thompson Seattle hotel.
