Looking for a taste of modern Valencian cuisine in Seattle? Look no further than Tarsan i Jane. This contemporary eatery is headed by husband and wife team Perfecte Rocher and Alia Zaine. It’s located in the Frelard neighborhood in Seattle. Since opening in 2016, Chef Rocher leads the kitchen in cooking his native Valencian-Catalan cuisine, with a Pacific Northwest spin. The restaurant is open four days a week from Thursday to Sunday, with the latter day focusing on Rocher’s famous paella.
